Some chicken curry are thick and spicy while some are full of gravy. But you can never try my home-made chicken curry which will melt in your mouth. Now this is a chance for you to spare some time with me.
Squeeze out 2 cups of thick coconut milk from the grated coconut. Clean the rice and drain. Cook the rice in the coconut milk with pandan. Add in some sliced shallots and ginger, optional. Rich after cooked remove the pandan leaves. Serve this rice with sliced hard-boiled eggs, peanuts, cucumber and sambal.
