I made this after it being taster night in class not knowing what to make and seeing what I had in the fridge and cupboards. Its vegetarian but could easily add some chicken or prawns to it or serve it as a filling side dish with a piece of chicken or fish. Spicy Cajun rice and beans. 8oz long grain rice. 2 pints vegetable stock from a cube is fine. 1 large onion chopped. 2 cloves garlic crushed. 1 can sweetcorn drained.CONTENT
