Friday, September 3, 2010. Morning in Acqua Dolce. Zio Giuseppe took us to visit one of his olive tree farms, this one just outside of Taurisano. Where the land is known as acqua dolce. And being able to visit the farm and learn about the process was one of my favorite parts of our vacation. Guiseppes farm has about 45 trees and nearly 100 others elsewhere, most of which are between 200 and 300 years old. He has worked on these farms since he was 14 or 15 years old, and knows each tree individually.
