Monday, 15 October 2012. 芋头 - 去皮净重 200g. 奶油 食油 猪油 - 我用白油 25g. 五香粉 - 1 4小匙. 胡椒粉 - 1 8小匙. 1 芋头洗净切小块芋头摸了会痒所以先戴上手套或搽上白醋又或者保持手部干爽, 可以避免切块了拿去蒸熟尽量把芋头排好不要重叠. 2 把蒸好的芋头块加入糖盐五香粉胡椒粉用叉压烂或用搅拌机搅至粘烂. 3 碗里倒入澄面粉加入热水用筷子趁热快速搅拌均匀很快就会拌好加入搅拌好的芋头粘状搅拌均匀再加入白油搅拌均匀形成面团放入冰箱20分钟. 4 20分钟后面团温度降低了比较不粘手撒上一些玉米粉稍微搓揉面团把面团搓成长条状,再把两端粘起, 搓成圈形, 放入冰箱20分钟. 5 热锅放油最好是可以盖过芋头圈待油温高时才放芋头圈去炸炸时可以一直翻转芋头圈就会炸出比较均匀的金黄色变可捞起.
