In that spirit, id like to share the recipe for my most recent paleo-esqe meal. For lack of a better name, well call it. Tomatillo cilantro chicken soup! 1c flat leaf parsley. 2 lbs chicken cubed. 3 jalapeños it does have some heat. 2 zucchini cut in ribbons like noodles. Sea Salt and Pepper. We served it over cauliflower rice for a little extra oompf. Free lunch.
