Baked Fish with Cherry Tomatoes, Artichoke, and Olives. 2 cups Cherry Tomatoes, sliced. Toss- tomatoes, artichoke, olives, shallots, wine, 2tbs olive oil, garlic, salt and pepper in a 13-9 dish. Nestle fish fillets into baking dish and brush with olive oil. Bakes 20-25 minutes, and serve with lemon wedges. Heat grill or oven to about 425F.
