Surviving Santa Fe

Potato and Pepper Taco with Mango. Red or Yellow Bell Pepper. Cube the potatoes and cut the Pepper, Onion and Mango. Saute together the potatoes, pepper and onion. Delicious on a hot summer day, especially in green chile season! This will feed 3-4 people.
