Here is a sample size of the heirloom orange tomatoes. Place them in boiling water for a minute or two, then place them in ice water to stop cooking and the skins will peel off easily. Here is about 10 quarts of chopped tomatoes ready to cook. The recipe calls for 12 quarts.
