Salad of arugula, goat cheese, roasted red peppers and toasted pistachios. This summer, while dining with a friend at a quaint little Italian bistro in Denver, I was able to feast on a most delicious salad. It consisted of arugula, goat cheese, roasted red peppers and toasted pistachios, all dressed in a light balsamic vinaigrette. It was memorable for sure. Last night I attempted to recreate this salad, and I must say, it had me raving all over again.
