Because, why not! Everything in moderation I say, especially when a test run was needed before my dads birthday! I made this exactly as per the classic Edgell recipe, but instead of canned beetroot I used 2 medium sized whole beetroot. I think using the fresh ones makes it a bit more moist, and added a lovely earthy flavour. The best thing about choc-beetroot cake is that it stays SO MOIST! 3 eggs, lightly beaten.

Have tried to log in to my Blogger account a few days ago but failed. I thought Blogger is punishing me for my silence which is almost. mute, but; to my surprise it was not so! Just realised that my online diary from my yester-years is too precious to be thrown away.
