Monday, December 23, 2013. That looks fancy but is easy to make, has a few simple ingredients and magically becomes more delicious as it sits in your refrigerator overnight. It is slices of sautéed eggplant rolled around a carrot, onion and herb filling, and it is so much tastier than it sounds.

This year, which is a kind of Jubilee for me, I have been making a small and occasional point of doing new things, especially ones Ive wanted, idly, to try for a long time and have never quite got round to before, but also keeping more of an eye out for new opportunities and saying yes to them!
