Wood has been used for centuries to flavour fish, meat, vegetables and fruit over an open fire. It was the Pacific Northwest natives who traditionally cooked wild salmon from the Columbia River by smoking a whole salmon on a Cedar and Alder wood plank. Foods cooked using wood are more moist, juicy and succulent as well as more flavourful.
