Family friendly food that tastes great. This Christmas cake never fails to impress. Soaking the fruit beforehand makes sure that the cake doesnt dry out. Once made it will keep for months so you can make it well in advance and feed it with brandy once a week for extra flavour. Grated rind and juice of one lemon. 1 level teaspoon baking power. 1 level teaspoon mixed spice. A good pinch of grated nutmeg.
