Salt and pepper, to taste. Heat oil in a large pot over medium heat and add garlic, shallots, leeks, carrot, and celery. Cook until shallots are translucent, about 2-3 minutes. Add potatoes and mushrooms, then season with salt and pepper. Cook until mushrooms reduce, about 5-6 minutes.
I made a delicious recipe today for dinner, from the Food Network. I did change a few things though. I did not have gorgonzola cheese, I used mozzarella instead. I also did not have bacon so I used a couple of slices of smoked ham chopped up. By the way I found this recipe by searching google the ingredients I had on hand. Monday, August 08, 2011.
