Tuesday, November 8, 2011. Potato Au Gratin Soup. Okay, for all you locals out there, you have probably been to the Coppermill and had their Potato Au Gratin Soup. Its my absolute fav. I have a recipe for potato soup, so I tweaked it a little, and tried to come up with my own au gratin soup, and it was yummy! Here is what I did. 23 cup margarine or butter which ever you prefer. 1 145 oz can chicken broth. 4 baked potatos, cooled, peeled and cut up in cubes. Add as much as you want. 1 cup sour cream.

Monday, October 8, 2012. 1 Melt the butter in a medium non-stick pan. Once the butter is melted, continue to cook until golden brown. The residual heat will make the butter a little browner so err on the side of golden brown vs. dark before you turn the heat off. 7 Eat as is or sprinkle with strawberries and powdered sugar. Enjoy!
