After the pig butchery weekend. I decided it was time to take some of that lovely Berkshire pig to the next level and make bacon! I chose three joints that I thought would make nice streaky and back bacon. I made things a little harder for myself by making my own cure, I brought the salt, saltpeter and brown sugar to do the mix. I got there in the end but metric or cup measures are so much easier! .

Jack or was his name something else? John Thomas Bolden the 1st father was Jonathan Lee Bolding of Pickens County, South Carolina. John met and married Margaret White on August 9, 1855 in Pickens. Enlisted around May 15, 1861 in the Confederate army and fought with Company H, 2nd S. Rifles Regiment until his death on June 10, 1863. Was captured and killed by the Federals in the swamps near Suffolk, VA.
