On our honeymoon through Spain Jason and I tasted a delicious version of Gazpacho called SALMOREJO. Its a Catalan soup. Instead of the chunky tomatoes, Salmorejo is creamy and tangy. and very refreshing. Back home, my first Salmorejo was a mix of different recipes I found online and my personal taste.
