Die Vollkornseelen nach Günther Weber hatte ich schon einmal gebacken. Jetzt hatte ich mal Lust auf die nicht so körnige Variante. Fündig wurde ich beim Brotdoc, der ein schönes Rezept für Dinkelseelen in seinen Rezepten hat. Ich habe das Ganze auf Übernachtgare umgestellt und das Butterschmalz durch das klassische Schweineschmalz ersetzt. Sauerteig aus 150g Dinkel 630. 15g Weizenanstellgut für 12h stehen lassen.
