Bater as claras até ficar em ponto de suspiro, acrescentar uma a uma as gemas, batendo sempre, ainda com a batedeira ligada acrescentar aos poucos o açúcar peneirado. Peneirar muito bem a farinha. Acrescentar à massa com a batedeira desligada, aos poucos, delicadamente, fazendo movimentos de baixo para cima.

A Pastry Journey From Mexico and Beyond. Friday, May 8, 2009. My Role as Chef Walter to the KINGS. This is my debut role as Chef Walter in the NBC series KINGS. I was making croissants for the Kings table, which the Queen did not want him to have. I had a lot of fun making the croissants on set. That 15 second spot took a large Camera crew and me almost two hours to tape. The scenes are always shot from different angles. I was lucky, and participated in about 3 to 4 more episodes as chef.
