Since I can never keep track of my recipes. Monday, July 18, 2011. Chop all vegetables and mix up with eggs. Cook in small skillet over medium heat. Sprinkle colby jack cheese over half of the omelet. When the top starts to get firm, fold in half and continue to cook. Flip the omelet over and finish cooking. Grate Gruyere over the finished omelet. Serve with salsa or sour cream.
