This was our dinner last night. I found some chorizo at our local meat market, which is one of my favorite places because the meat they sell comes from locally raised, pastured animals. Chorizo is basically ground pork with some spices, including chili powder that gives it the red color. I decided to make stuffed zucchini with the chorizo. 1 ounce shredded raw cheddar cheese.

Saturday, March 5, 2011. I Just Want To Thank You Lord. Even though I found out news this week that shocked me, God is still good, If the Lord brings you to it then he WILL see you thru it! Sometimes we question God on what he thinks best when we have no reason to! After all he created us, I often find myself asking God why? This certainly is a lovely moist loaf. Found it a little too sweet, used honey instead of syrup, next time I would cut back the sugar and add some nuts and dark chocolate. A great option is to put the mixture into muffin tins, watch the bake time. You can freeze them, grab and go.
