Monday, December 27, 2010. I cannot believe that 4 months have gone by since I returned to Minnesota from Cartagena. It simultaneously feels like a an incredibly long time and a relatively short time. Cartagena is very dear to me, and always will, but while I search for ways to return, I am living my life in Minnesota.

Arugula and cheese ravioli with vegetables. There are times when we are just too busy to cook a dish from scratch. Our preferred mode of eating. So for those times we keep ravioli in the fridge. Typically, I will put some olive on in the pan, add onion and garlic, and after that vegetables like broccoli and mushrooms. Then some more Parmesan cheese to give it a slightly creamy feel. Finally, add the ravioli, mix it up and serve. Arugula and cheese ravioli with vegetables.
